FeedMeMore - Instant pot heirloom tomato risotto with lightly pan fried shrimp ๐Ÿ’

Risotto is a favorite dish in the home here... and it's so easy with the Instant pot ๐Ÿ‘. Here, I went with heirloom tomato risotto ๐Ÿ’ฅ; it includes other quality ingredients such as chicken broth, fresh onion, pinches of oregano/basil, 5 peppercorn grind, Himalayan pink rock salt, a splash of white wine and hand grated Grana Padano cheese . The shrimp in shell was lightly pan fried from raw. Super tasty and highly recommended ๐ŸŽฏ. 

Great eye appeal too ๐Ÿ‘€.

FeedMeMore - These escargot in butter came out excellent with a simple scratch seasoning ๐Ÿ‘

Made classic-style with fresh minced garlic, dried parsley, onion powder, Himalayan pink rock salt, custom 5 peppercorn grind and sugar ๐Ÿ˜‹. All served with lightly seasoned & warmed garlic bread for dipping. Check it out ๐Ÿ‘€.

FeedMeMore - ๐Ÿ”ฅ๐Ÿ”ฅ Grilled classic (rosemary) lamb shoulder chops ๐Ÿ’

Another great meal to blog about, classic rosemary lamb shoulder chops from the grill ๐Ÿ’–! For this, I made a scratch marinade up of fresh minced garlic, fresh rosemary, a touch of thyme, Himalayan pink rock salt, 4 peppercorn grind and extra virgin olive oil ๐ŸŽฏ. Then these shoulder chops sat in the marinade for 12-16 hrs before cooking ๐Ÿ˜‰. Grilled on the Weber Summit on gas. Excellent, top notch recommended and a real looker again ๐Ÿ‘€.

FeedMeMore - ๐Ÿ”ฅ๐Ÿ”ฅ Grilled pork tenderloins served with fresh asparagus and Yorkshire pudding ✨

I hope everyone enjoyed Easter; this was my Easter holiday meal this year ๐Ÿ’ฅ. I wasn't paying much attention to the calendar and didn't realize it was Easter until Friday morning. I was planning other dishes, but hadn't picked anything up yet and I knew the local grocers would be be mostly picked out. So I perused my freezer and went with pork tenderloins ๐Ÿ‘. 

I stuffed one pork tenderloin with pickled pepperoncinis and cream cheese (plus some pickled California chili peppers, and the other pork tenderloin was marinated overnight in olive oil, premium (viscous) balsamic vinegar, pepper and fresh minced garlic. I made the Yorkshire pudding with bacon fat and the ๐Ÿ”ฅ grilled asparagus was fresh and on-sale. Check it out ๐Ÿ‘€ and enjoy!
